Many seasonal fruits and vegetables are making their way onto our plates this July.
Here's a recipe for a summer salad that uses mesclun from the garden or the market and adds a moringa vinaigrette. Moringa is a powerful superfood that enhances this summer salad recipe with its vitamins, minerals and phytonutrients.
This summer salad is delicious and flavorful. It makes a light dinner or is the perfect accompaniment to salmon fillet, grilled chicken breast or tofu kebabs.
Preparation : 10 minutes
Servings : 6 side salads
Culinary tools: Food processor
Ingredients
150g washed mesclun lettuce
½ pint blueberries, washed and drained
6 slices red onion, thinly sliced
2 handfuls raw pumpkin seeds
Moringa vinaigrette
1 avocado, peeled and pitted
Juice of one lemon
3 teaspoons Nia Pure Nature organic moringa powder
3 teaspoons of raw cane sugar
1/3 cup unsweetened, unflavored plant milk
salt and pepper
Preparation
- Spread the mesclun lettuce in a salad bowl. Add blueberries, onion rings and garlic. raw pumpkin seeds.
- Toss salad and divide between bowls or plates.
- In a food processor, blend in dressing ingredients, including the Nia Pure Nature organic moringa powder. Season lightly with salt and pepper.
- Pour moringa vinaigrette (to taste) over summer salads.
- Enjoy!
