Detox Soup Green Vegetables and Nettle

Soup Ingredients
- 2 tablespoons of avocado oil
- 1 large organic leek, roughly chopped
- 2 stalks of organic celery, roughly chopped
- 1 large organic yellow potato cut into cubes
- 3 tablespoons of dried organic nettle leaves
- 6 cups of vegetable broth of commerce or homemade vegetable broth
- 1 whole organic broccoli, rinsed and trimmed
- 5 oz organic baby spinach
- 250 ml of Isola Bio rice-based cooking cream
- Toppings (optional): dried organic nettle leaves and pistachios
N.B. It is important to use organic ingredients to obtain the detoxifying effect of this recipe.
Preparation for the Soup
- In a large pot, heat the avocado oil over medium heat.
- Add the leek and celery stalks, brown for a few minutes before adding the potato, nettle and vegetable stock.
- Cover and bring to a boil, increasing heat to high.
- When the liquid is bubbling, return to medium heat and simmer for about ten minutes.
- Add the broccoli. Continue cooking for 7 minutes.
- Add the baby spinach and finish cooking for a final minute.
- Remove from the heat and add the rice-based cooking cream.
- Grind with a hand blender until smooth and uniform.
- Garnish with dried organic nettle leaves and of pistachios.
