Traditional Tonkinese soup recipe

Ingredients for the Tonkinese soup recipe
Bouillon (sauce) ingredients
To make a soup broth in just a few minutes, make sure you have all of these ingredients:
- 2 tablespoons of oil for cooking (30ml)
- 1 yellow onion cut into quarters
- 10 cups of water
- 2 whole cloves of garlic
- 5 cm sliced fresh ginger
- 10 whole cloves
- 5 anise stars
- 3 cinnamon sticks
- ¼ cup of tamari (60ml)
- ¼ cup of traditional miso (60ml)
- 1 sprig of basil
- 2 tablespoons of Turbinado raw cane sugar (30ml)
Toppings
- 2 cups Chinese cabbage, sliced into strips (500 ml)
- 2 carrots, grated lengthwise
- 1 package shiitake mushrooms whole or cut into strips
- rice noodles (replace with konjac noodles for paleo version)
Accompaniments
- Free-range chicken eggs or quail eggs
- Sprouted soybeans
- Lime wedges
- Chopped green onions
- Jalapeno
- Hoisin Sauce
- Fresh herbs including: basil, Thai basil, mint, coriander, shiso
- Optional: imitation meat (vegetable) or meat (chicken, beef, pork, seafood, lamb, beef, duck) for those who can't do without it. Chicken is generally very popular, as is beef.
Preparing soup meal
- In a large pot, heat the cooking oil and brown the onion for the soup.
- Then add the water and all the ingredients that complete the broth. Cover and bring to a boil. Reduce heat and simmer for 30 minutes. (This step can be done in the slow cooker for 4 hours which gives more flavor or in the pressure cooker under the broth function)
- Drain the broth so that only the liquid remains.
- Add the strips of cabbage and carrots, shiitake mushrooms, rice noodles. Continue cooking for 10 minutes.
- Serve the soup in wide-mouthed containers.
- Top with some suggested accompaniments, including sprouted soy beans, eggs, Hoisin sauce and fresh herbs.
